Scoop the risotto into 16 pieces, slightly larger than a walnut. Flatten a risotto ball in your hand and put a piece of mozzarella in the center.

Close the rice around the mozzarella and roll it into a tight ball. Set the arancini ball aside on a plate or a cutting board.
