The main characteristic of it is the way it is arranged, cooked and presented. Maqluba means "upside-down" and that's how this beautifully layered rice dish is served.

Drizzle with oil on the bottom of the pan. Start with layering your leftover roast lamb, sprinkle on ¼ of the pine nuts, currants and seasoning.

Finish layering with rice. Add the stock to the rice, without spoiling the layers. Put a lid on the pan and bring it to a boil on medium heat.
