Menemen is a very popular and loved breakfast dish in Turkey. Traditionally, this simple yet delicious egg dish is made with tomatoes, Turkish green peppers and eggs.

The key to getting the best flavour is to cook the peppers very gently without burning them. Gently sauté the peppers with olive oil for a few minutes, until slightly softened.

When the tomato sauce is cooked, lightly beat the eggs and add them to the pan. Mix gently using a wooden spoon or a spatula.
