Prepare the marinade with yogurt, salt and black pepper. Rub the chicken with the marinade making sure all the skin is totally covered.

Put a large pan on medium to low heat and add olive oil. Add the onions and pine nuts, and gently sauté until translucent.

Stir in the rice and sauté for a few minutes until the rice is dry. Add the black currant, salt, and pepper, and pour in the lemon juice and 300 ml of water.

Bring it to a boil, put the lid on, and simmer for 8-10 minutes or until the rice absorbs the liquid. Remove the pan from the heat and add the parsley.

With the help of a spoon, stuff the cavity of the chicken loosely with rice stuffing. Keep the rest of the stuffing to cook later to serve as a side dish.

Place the chicken in a dutch oven, pour in 500 ml of water, and cook covered for an hour. Cook for another hour uncovered until the core temperature reaches 167° F.

Remove the chicken from the oven, transfer it to a cutting board and loosely cover it with tin foil. Let it rest for 15 to 20 minutes before carving.

While resting the chicken, cook the rest of the rice stuffing and prepare the gravy. Click on 👇 "learn more" for the full recipe and video instructions.
