These savoury treats are usually shaped like a football and can be fried, boiled or baked. You can serve them as a side dish, an appetiser or a part of a mezze selection.
Combine the bulgur, semolina and water in a bowl. Mix well and let it rest for 30 minutes. Add the rest of the ingredients to the bulgur mixture. Mix with your hands and knead it for 5 minutes
Mix in the salt, black pepper, cumin and sauté for another minute. Remove the pan from the heat and stir in the parsley and walnuts. Let it cool down before filling the casings.
Hollow out the inside using your finger into a cup. Add a spoon of filling and close up the casing. The amount of filling may depend on the size of the cup.
Seal the top by pinching in the casing and using both hands, compress well to resemble the shape of a football. Gently work the wrapper closed as you turn the kofte in the palm of your hand.
