Turkish Cheese Rolls are the perfect finger food for parties and celebrations. They are made with thin pastry called "yufka" filled with cheese.
Making these delicious cheese rolls is very easy & straightforward. However, to achieve the best results you need to follow few simple steps.
Start with preparing the cheese filling. Crumble the feta cheese and mix with grated halloumi, chopped parsley and dill.
Cut 3 round shaped filo pastries (which is called yufka Turkish) into 8 equal triangles. That would give you 24 triangles in total.
Place a triangle of a yufka on a large, flat surface, pointed end away from you. Add some cheese to the wide end and spread it into a thin line, leaving a small gap on either side.
Fold the flat end over the top of the cheese, fold the outer corners over the filling and roll the borek tightly.Watch this short video to see how to roll Crispy Cheese Rolls.
Set them aside on a plate and continue with the remaining yufka and filling. You should have 24 Boreks out of 3 yufka sheets.
Fry the Boreks in hot oil on all sides until crispy and golden. Place them on a paper towel to absorb the excess oil
