Su Boregi which means "Water Borek" is one of the most loved boreks in Turkey, and is by far the best of all Turkish Pastries.

Simmer them for 30 seconds, and drop them into the ice-cold water. Start building the borek on a round tray size of 35 cm (14") dia.

Layer the rest of the yufka sheets on top of the filling, brushing with butter generously in between the sheets.
