    You can serve these tasty and crispy Zucchini (Courgette) Pancakes as an appetizer, finger food, or even as a light lunch along with a bowl of Lebanese Fattoush Salad or Greek Cucumber Salad. Mücver is also a great side dish to many Mediterranean dishes such as Salmon and Spinach Quiche and Sac Kavurma (Turkish Lamb Sauté).

    Mucver (Turkish Zucchini Fritters) is a traditional Turkish snack, meze, or appetizer made with grated zucchini that is mixed with eggs, flour, and herbs. These small zucchini pancakes are typically shallow fried in a pan until golden and crispy but can also be baked in the oven or an air fryer.

    These crispy and savory fritters are typically served with a yogurt dip such as Cacik (Turkish Yogurt with Cucumbers) or Haydari (Turkish Yogurt Dip).

    • Zucchini - Use fresh, young ones as they will have less water and more flavor than bigger ones.
    • Herbs - I use flat-leaf parsley, dill, and mint (both fresh and dried) for this recipe but you can use different herbs you have in your fridges such as basil, chives, or chervil.
    • Egg - It binds the mixture together and adds flavor.
    • Flour - It gives a crispy texture to the fritters while they stay soft inside. You can substitute it with rice flour or cornflour for a gluten-free version.
    • Spring onion - I use the green part of spring onions for this recipe but you can use any type of onions as long as you chop them finely.

    Grate the zucchini and place them in a colander. Sprinkle with a little salt to get rid of excess water and leave to drain for 10 minutes.

    Place in a tea towel or absorbent paper towel and squeeze out excess water then transfer in a large bowl.

    Place the spring onions, fresh and dried mint, parsley, dill, egg, flour, salt, freshly ground black pepper, and baking powder into a large bowl.

    Add the grated zucchini to the bowl.

    Mix well using a fork until everything is evenly combined.

    Heat a large frying pan on medium heat and add the vegetable oil. When the oil is hot, drop a heaped spoonful of the mixture into the hot oil and gently press to flatten it out a little. Depending on the size of your pan, fry 4 or 5 fritters at a time.

    Fry for a few minutes until they are golden brown then flip them using a spatula. Fry the other side for a few more minutes and place them on a plate layered with a paper towel to absorb excess oil.

    Top Tips From the Chef

    • Fresh garden zucchini is usually heavy with water. If you use them right away after grating them, the fritters won't be crisp and stay soggy. The trick to keep the zucchini fritters from being mushy is to get as much water out of them as possible. It is very important not to rush this step and get rid of the excess water from the zucchinis as it will affect their texture.
    • Use fresh herbs for the best flavor. You can also experiment with different herbs or add chopped onions or garlic for extra flavor.
    • Before frying the fritters, it's important to ensure that the oil in the pan is hot enough. One way to test the oil is to sprinkle a pinch of flour into it - if it sizzles immediately, then the oil is ready for frying.
    • Fry the mucver in small batches to ensure they cook evenly and maintain their shape.
    • To prevent the fritters from becoming oily, place them on a paper towel-lined plate to drain off any excess oil after frying.

    How to Serve Mücver?

    Mucver is best when served warm or at room temperature. These crispy vegetable pancakes are great on their own as a snack or appetizer, but they are also delicious with a variety of dipping sauces and sides.

    Here are some ideas for what to serve with mucver:

    • Yogurt Dip - A classic accompaniment to mucver is a simple yogurt dip. Mix some plain yogurt with chopped garlic, salt, and a pinch of paprika for a tasty and refreshing dip.     Can you freeze zucchini fritters?

    Yes, you can easily freeze them once they are cooked and cooled down to room temperature and keep them frozen for up to 3 months.

    Can I make the zucchini fritters mixture in advance?

    I suggest making the mixture just before cooking them. The courgettes can let out extra liquid as they stand in the batter, which could make it too thin.
    You can prepare the batter in advance and add the grated courgettes to the batter just before cooking.

    What are some variations of mucver?

    Ingredients
     
     

    • 2 medium courgettes (approximately 1 lbs/450 g) (grated)
    • 4 spring onion (green part only, sliced)
    • 6 sprigs fresh mint (finely chopped)
    • 1 teaspoon dried mint
    • 2 tablespoon parsley (finely chopped)
    • 2 tablespoon dill (finely chopped)
    • 1 large egg (or 2 small eggs)
    • 4 tablespoon flour (60 grams)
    • ½ teaspoon salt
    • ½ teaspoon freshly ground black pepper
    • ½ teaspoon baking powder
    • ⅓ cup vegetable oil (for frying)

    Instructions
     

    • Grate the courgettes, place them in a colander, sprinkle with a little salt, and leave to drain for 30 minutes.
    • Place the grated courgettes in a tea towel or absorbent paper towel and squeeze out excess water then transfer to a large bowl. 
    • Add the spring onions, fresh and dried mint, parsley, dill, egg(s), flour, salt, freshly ground black pepper, and baking powder to the courgettes and mix well to form a thick batter.
    • Heat a large frying pan on medium heat and add the vegetable oil.
    • When the oil is hot, drop a heaped spoonful of the mixture into the hot oil and gently press to flatten it out a little. Depending on the size of your pan, fry 4 or 5 fritters at a time.
