    Minced lamb is worked with peppers, onion and spices, then shaped onto skewers and cooked until browned and juicy. It is the milder cousin of the fiery Adana, so it suits the whole table.

    Chicken Shish Kebab

    Chicken is marinated in yoghurt, garlic and spices until tender, then threaded onto skewers and cooked until lightly charred at the edges. Grill it, griddle it or cook it under a hot oven grill depending on the weather.

    Islim Kebabi (Aubergine Meatball Wraps)
