These Blackberry Streusel Muffins are made with juicy blackberries, white chocolate, and a crunchy oat topping. They're golden on top, soft and buttery in the middle, and ready in about 40 minutes.

You can use fresh or frozen blackberries, and they both work well. They're perfect for breakfast, a lunchbox, or an afternoon snack with coffee. I bake a batch most weekends, and they never last until Monday.

Ingredients You'll Need

- Blackberries - Fresh and frozen berries are both fine here. If you're buying fresh, pick plump, dark ones.
- All-purpose flour - It's called plain flour in the UK. It goes into the batter and the streusel.
- Unsalted butter - You need it twice, melted for the streusel and browned for the muffins. The brown butter tastes nutty and rich.
- Granulated sugar - For the batter. Superfine sugar also works if that's what you have.
- Light brown sugar - For the streusel. It tastes a little of caramel and browns nicely in the oven.
- Rolled oats - Old-fashioned oats make the streusel extra crunchy. Quick oats work, but the topping comes out softer.
- Greek yogurt - Use full fat if you can. The crumb comes out softer and moister with it. Sour cream works in its place.
- White chocolate - Chips or chopped chunks both work.
- Lemon - You need the zest and a little of the juice. It stops the muffins from being too sweet.
- Vanilla paste - Vanilla extract works if you don't have the paste.
Equipment You'll Need
These blackberry streusel muffins need a 12-hole muffin pan, paper liners, and a small saucepan for browning the butter. Use one bowl for the streusel and a bigger one for the batter. There's nothing special in the setup.
How to Make Blackberry Streusel Muffins?
Brown the Butter
Melt the butter for the muffins in a small saucepan over medium heat. Cook it for about 10 minutes, until it turns golden brown and smells nutty. Pour it into a bowl and let it cool down as you get the rest of the ingredients ready.
Make the Streusel
Heat the oven to 200° C - 392° F and line a 12-hole muffin pan with paper liners. Mix the flour, oats, brown sugar, lemon zest, and salt in a bowl. Stir in the melted butter until the mixture looks like damp crumbs, then set it aside.

Mix the Batter
Whisk the flour, baking powder, baking soda, and salt in a large bowl.
In another bowl, whisk the cooled brown butter with the oil, sugar, eggs, yogurt, vanilla, lemon zest, and lemon juice.


Add the dry ingredients to the wet mix and fold until just combined. Toss the blackberries with a teaspoon of flour, then fold them in gently with the white chocolate.


Fill the Liners and Bake
Divide the batter between the 12 liners and scatter the streusel evenly on top.


Bake for 5 minutes, then lower the oven to 180° C - 356° F and bake for another 18 to 20 minutes, until a skewer comes out clean. Let the muffins cool in the pan for a few minutes, then move them to a wire rack.


Recipe Tips From the Chef
- Let the brown butter cool down before mixing. Hot butter can scramble the eggs.
- Fold the batter until the flour just disappears. Overmixing makes the muffins dense and chewy.
- Tossing the berries in a little flour stops them from sinking to the bottom.
- Use frozen berries straight from the freezer. Thawed berries release juice and turn the batter purple.
- The oven starts hot so the blackberry streusel muffins rise tall. Don't open the door in the first 15 minutes.
- Room temperature eggs and yogurt mix into the batter more evenly than cold ones.
- Check at 18 minutes with a skewer. The muffins are done when it comes out clean, with no wet batter on it.
Variations
- Swap the blackberries for blueberries, raspberries, or chopped strawberries.
- Use milk or dark chocolate instead of the white chocolate, or leave it out.
- Add a handful of chopped pecans or flaked almonds to the streusel.
- Use orange zest in place of the lemon. It goes really well with blackberries.
- Mash a ripe banana into the wet ingredients to make banana blackberry oatmeal muffins.
- For mini muffins, cut the berries smaller and skip the hot start. Bake at 180° C - 356° F for 11 to 13 minutes.
Storage and Make Ahead Instructions
Keep the blackberry streusel muffins in an airtight container at room temperature, where they stay fresh for 2 days.
For longer storage, freeze them for up to 3 months, wrapped well or in a freezer bag. Defrost them at room temperature, or warm them in a low oven for a few minutes.
You can bake them a day ahead for a brunch, and the streusel stays crunchy.
How to Serve Blackberry Muffins
A warm blackberry muffin with a cup of coffee or a glass of Turkish Tea is my favorite way to eat them.
They go into lunchboxes just as they are, and they're good with a spoonful of homemade Greek yogurt for breakfast.

FAQs
The berries were probably wet or not coated in flour. Dry them well, toss them in a teaspoon of flour, and fold them in last.
The batter was probably overmixed, or the muffins stayed in the oven a few minutes too long. Fold the batter gently, and take them out as soon as a skewer comes out clean.
It is better not to. The baking powder and baking soda start working as soon as the batter is mixed, and the muffins come out flatter the next day. Bake them first and freeze them instead; they keep for 3 months.
This recipe uses butter, oil, and Greek yogurt together, and that keeps the crumb soft for 2 days. Mix the batter gently and do not overbake, and the blackberry streusel muffins stay moist.
