    Ways to Use a Big Bag of Sweet Peppers is for when you buy a mixed pack, use two for dinner, and put the rest in the fridge. A few days later, they are still sitting there, so this collection gives you plenty of ideas before they start to soften. Roast them, grill them, stuff them, cook them into a meal, or blend them into a dip to serve with warm bread.

    These Turkish-style Vegan Stuffed Bell Peppers, also known as Biber Dolmasi, are made with small bell peppers filled with rice, onions, pine nuts, currants, herbs, and olive oil. They are cooked gently on the stovetop until the peppers soften, and the rice filling is tender. You can serve them warm, cold, or at room temperature, which makes them perfect for mezze, summer dinners, picnics, or making ahead for guests.

    Red Pepper Paste

    Biber Salçası is a rich, peppery, and deeply red Turkish condiment made from fresh red peppers. It is one of my favorite ingredients that I use for traditional Turkish recipes such as Biberli Ekmek and Chicken Shish Kebab. You can cook it slowly on the stovetop or bake it in the oven until thick and concentrated.
